You know that broccoli salad? The one with all mayo, vinegar, sugar, raisins, sunflower seeds & bacon? Yeah, I can’t do broccoli or too many eggs…
Wanted to make the roasted sweet potato salad with lime/cilantro dressing but Anas system isn’t a fan of lime…so created this little delight!
4 Sweet potatoes peeled & cubed
8-9 slices of bacon, cut into 1in pieces
Salt, white pepper, parsley, garlic/onion powder
1/2 c raisins
1/4c sunflower seeds
1 red bell pepper, diced
Honey mustard dressing
– Preheat oven to 450.
– Mix sweet potatoes, bacon and a dash of oil & spices in a bowl. Just enough to wet potatoes & season.
– Roast till potatoes tender, about 25-30mins, stiring frequently to avoid burning.
– Let cool
– Mix with raisins, seeds, bell pepper and as much or little dressing as you like.
