Ok, I got adventurous, I made mayonnaise! Now, not hard, just intimidating!
I followed this recipe with olive oil. You can use whatever you like. Either, canola, sunflower or safflower will be best.
Potatoes (I used a 1lb 8oz bag of yellow fingerlings, they were on sale)
2 or 3 hardboiled eggs
Salt & pepper to taste
1) Boil potatoes, let cool a bit. Cut into bite sized pieces. Put in large container.
2) cut eggs & olives, add to potatoes.
3) add as much or little mayo as you like & mix.
4) salt & pepper to taste.
5) chill & enjoy!
